Four Pillars Gin Brings Limited Edition Christmas Gin to UK

Four Pillars Gin, a gin made in Australia, has for the first time released a limited number of bottles of its Christmas Gin to the UK. The gin, which is made using distilled Christmas puddings, will be available from the end of November.
When Cameron, one of the co-founders of Four Pillars Gin, was growing up, his late mum would make Christmas Puddings on Derby Day – one of the biggest sporting occasions in Australia – while the rest of the family watched the horse racing. So now, each year, Cam continues this family tradition but with a twist.
Instead of making the Christmas puddings, he distils them by putting them in the botanical basket of the Four Pillars still to make the gin and distils a base of juniper, cinnamon, star anise, coriander seed and angelica, over the top of them.
To make the gin even more delicious, Cam then blends this gin with a second gin which has been aged in several Muscat barrels that are over 100 years old, including two 125-year-old ex William Grant whisky barrels that, prior to arriving at the distillery in Healesville in Australia, held Rutherglen Muscat for 80 years.
Cameron blends this gin with the Christmas pudding gin and to finish it off, adds a slight tweak of classic Rutherglen Muscat to round out the palate and adds a touch of richness.
To make the 2017 that little bit different, the Four Pillars team have also added a small amount of their ‘own’ muscat which has been maturing at the distillery in old puncheons (a large cask for wine or spirits) that used to hold aged Pedro Ximenez from the Barossa Valley, which will make the gin even richer than previous years.
The resulting gin smells like gin and tastes like Christmas. Aromatics of classic juniper and a hint of cinnamon, backed up with a rich, luscious palate with a hint of sweetness from the Muscat and richness from the extended barrel ageing.
How to drink Four Pillars Christmas Gin:-
Amazing served simply over ice or for a real treat, try it in a Christmas Martinez:
- 40ml Australian Christmas Gin
- 20ml Dolin Rouge vermouth
- 10ml Dom Benedictine
- A couple of dashes The Bitter Truth Old Time Aromatic bitters
- Stir all ingredients over ice
- Strain into a martini glass and garnish with an orange twist
